If you’re in the mood for a cozy winter meal that comforts without all of the calories– try out this recipe to make a three bean chili with Lightlife’s Smart Chick’n Strips. This vegan dish will definitely fill you up, and it is a perfect alternative to the meat-heavy chilis that often accompany the holiday season.
2 red bell peppers
3 tablespoons extra-virgin olive oil
1 cup chopped onion
2 teaspoons ground cumin
1 teaspoon crushed red pepper
1 teaspoon paprika
4 garlic cloves, thinly sliced
2 cups organic vegetable broth
1 (28-ounce) can no-salt-added tomatoes, undrained and chopped
1 (15-ounce) can pinto beans, rinsed and drained
1 (15-ounce) can cannellini beans, rinsed and drained
1 (15-ounce) can red kidney beans, rinsed and drained
1/2 cup thinly sliced green onions
1 package of Lightlife’s Smart Strips Chick’n
- Heat olive oil in a large pot– swirl to coat.
- Sauté onions, garlic, and bell peppers in the large pot, stirring frequently.
- Add vegetable broth, tomatoes, the three types of beans, all of the spices. Cut up Lightlife’s Smart Strips Chick’n strips into desired size (bite size pieces suggested), and add them into the Chili. Reduce heat and let it simmer for about half an hour– or until the Chili is slightly thick.
- Serve and enjoy!
